Pomegranate, Ginger Spritzer

So, I learned how to drive a bobcat on YouTube. True story.

I then proceeded to make a mess of our driveway and knock down a retaining wall in the process. It was a blast. I felt like a kid driving a Tonka truck.

Hours after the destruction I showered away my inner construction worker and lazily relaxed in the backyard in a sundress with my über girly pomegranate, ginger spritzer in hand.

Earlier in the day my neighbors dropped off a bowl of pomegranates from their garden so I quickly went to work running the plump, juicy seeds through my juicer.  Finishing it with a nice sized piece of ginger. I sweetened it with raw honey and then popped open a bottle of Prosecco and voila! A spritzer was born. It was bubbly, pink, and sweet with a little kick of spice from the ginger.

If you don’t have a juicer you can blend the pomegranate seeds and ginger in a blender and strain through a fine mesh strainer. Or you can by pomegranate juice and ginger ale. You can also make it virgin by subbing the Prosecco for sparkling water.

Now go knock down some walls and enjoy!

Pomegranate Ginger Spritzer
Makes about 1 cup

4-6 Pomegranates, seeded

1 Thumb sized piece of ginger, peeled

2 Tablespoons honey to taste

1 Bottle of Prosecco or Sparkling Water (1L)

  1. Juice the seeds and ginger saving a few seeds to add to your drink. Alternately, you can blend everything in a blender and strain the seeds. Add honey to taste.
  2. Spoon a tablespoon or 2 into a champagne glass along with a few pomegranate seeds and then pour in the Prosecco!
