I may have lied to you a bit but I promise I did not mean too.You see, I’m advertising a Mint, Pea, and Garbanzo Bean mash but for the last three times I have made this recipe I cannot find any green garbanzo beans so I used lima beans instead. I hope you can forgive me.
I keep holding out hope that you might get luckier than me and find a pretty little bag of frozen green garbanzo beans in your local frozen section and you’ll make this dish, show it off to your friends and brag about finding these healthy, delicate and delicious gems but in case you can’t find them (like me) use lima beans instead. They are still very, very good but lima beans just don’t have the same ring to them.
I digress.
I have probably made this dish close to 100 times. It. Is. That. Good. It is my go-to appetizer for parties and with the 4th of July celebration right around the corner I had to break this out for you. It’s delicate, bright flavors are a fantastic compliment to a piece of grilled halibut and I’ve also been known to just eat it straight from the bowl. It probably goes without saying that it’s extra lovely on a gluten-free cracker or a baguette!
MINT, PEA AND GREEN GARBANZO BEAN MASH
[Serves 4] Download Mint, Pea and Garbanzo Bean Mash Here
1 cup green garbanzo beans or baby lima beans (buy frozen and thaw)
1 cup baby peas (buy frozen and thaw)
Zest and juice from one lemon
¼ cup veggie broth or olive oil
2 tablespoons mint, chopped
Salt and pepper to taste
Add all the ingredients to a food processor and process until mashed but still a few whole pieces in it. Enjoy with gluten free crackers or carrots.
