Sweet and Spicy Couscous
Do you ever stare at your fridge or pantry with a bewildered look wondering what the heck you were going to have for dinner?
Me too.
In fact, just the other night I had a mostly empty fridge, nothing in the freezer and I just did not feel like eating out so I sent Steve off to the store for a rotisserie chicken while I tried to turn nothing into something.
This is where a well-stocked kitchen comes into play. I typically always have a variety of grains in my pantry but most of them take at least 20 minutes to cook and that doesn’t include the soaking time and I wasn’t in the mood for that so I headed strait for the Israeli couscous.
Israeli couscous is feather light and is basically tiny little balls of pasta. It’s quick and easy to cook and is great to have on hand to whip something up in a pinch – which is where this recipe came from.
With three simple ingredients (and someone to run to store for a rotisserie chicken) you can whip this up in no time. Add a salad dressed with this Forkin’ Healthy approved dressing and you are well on your way to a meal that is healthy, delicious and fast!
* Bonus Foodie Advice – drizzle a little lime flavored olive oil on top of the dish and garnish with micro greens.
Sweet and Spicy Couscous
Serves 4, Cook time: 10 minutes

2 cups couscous
3 cups water or bone broth
1 teaspoon Himalayan sea salt
1 heaping tablespoon of garam masala or curry
2 tablespoons mango chutney
Boil the water in a sauce pan. Add the salt and couscous and reduce heat to low. Cook until most of the water is absorbed – about 5 minutes. Stir in the garam masala and remove from heat. Fluff with a fork and add the mango chutney.
