Have you ever have one of those accidents in the kitchen that actually turn out to be absolutely amazing?
We did.
Our neighbors, good friends and regular dining partners invited us over for dinner one night to test out their brand-new, turns food into gold, infra-red deep fryer. This fryer was suppose to have the benefits of a deep fryer but without the mess and love handles that fried food brings. After rubbing the chicken down with a hodge podge of spices and dropping it into the fryer and putting some potatoes in the oven we waited and watched, drank some wine and waited some more.
And waited.
What was suppose to only take an hour to make took almost 2 hours! There was definitely a learning curve that took place that night but the chicken was worth it but the real shining star were the potatoes. They quietly sat roasting away in the oven while we hovered over the faux fryer with our wine glasses waiting patiently for our dinner to finish cooking. Once we realized that we had forgot about them we rushed to the oven and pulled them out of the oven expecting them to be burnt to a crisp.
But burnt to the crisp they weren’t.
Instead they were perfectly faux-fried. The long cooking time had completely dried them out which gave them an uber-crispy texture that was reminiscent of my favorite duck-fat fries.
Since then I have made them again every time I roast a chicken – which is a lot! I don’t cook them for 2 hours because really…who has time for that?! Instead I cook them for an hour at 400 degrees and they turn out just as amazing!
You can use a variety of spice combinations but the most important seasoning is salt – you will use a lot but don’t worry about that part. As long as you are using himalayan or real salt you are getting tons of minerals that your body desperately needs. Here are a couple of my favorite combos:
• Smoked Paprika, Garlic Powder and Salt
• Rosemary, Garlic Powder and Salt
• Cumin, cayenne pepper, lime zest and salt
• Cajun Spice, salt

PERFECT ROASTED POTATOES
Serves 4. Prep time: 10 minutes, Cook time: 60 minutes

1.5lb or 6 medium red potatoes
3 tablespoons avocado oil or ghee
1 tablespoon smoked paprika
1 tablespoon garlic powder
2 heaping teaspoons himalayan sea salt
Pre-heat the oven to 400º. Wash potatoes to remove any excess dirt and chop into bite size pieces.
Put the potatoes on a rimmed baking sheet, add oil and spices and toss until the potatoes are coated well.
Periodically check on the potatoes and turn them with a spatula.
