This cherry and chocolate chip chia pudding {say that 10 times fast} is my little gift to you on this lovely weekend of love. It’s a super quick, super delicious and super easy recipe to make.
I’ve been crazy busy the last couple of weeks and when life gets busy for me I seem to not cook nearly as much as I would like too so this weekend I am taking myself on a mini getaway to break away from my to-do lists, my housework, cleaning the chicken coup and basically any kind of responsibility. I plan on reading, napping, cooking, drinking a couple of moscow mules and spending some much needed quality time with my husband.
But before I go offline for a couple of days I wanted to share this great little recipes that I whipped up last night during a cooking class at the library.
It has all over my food requirements wrapped into a little jar – pretty, healthy, delicious and easy. The part that takes the most time is soaking the cashews for the cashew cream which BTW is optional…you can always use almond milk instead.
BUT the cashew cream is pretty freakin’ awesome. I learned this recipe from Emily at NourishMint Wellness. She makes this cream ALL. THE. TIME. and adds it to soups, coffee, smoothies…basically anything that might call for heavy cream or half n half. Try it and I promise you will be hooked.
Once the cream is ready all you need to do is add the frozen cherries, chocolate chips {I used this brand} and stevia and whirl that up in your blender. Then, stir in the chia seeds and let that sit in the fridge for 30 minutes and you have dessert! Top it with some mint and chocolate chips and enjoy.

Cherry and Chocolate Chip Chia Pudding
Serves 4 Prep time: 10 minutes, Soak time: 30 minutes – overnight

1 cup cashew cream (recipe below) or almond milk
1 cup frozen cherries
¼ cup chia seeds
1/3 cup chocolate chips
Couple drops of stevia (optional)
Blend the cashew cream, cherries, chocolate chips until smooth. Taste for for sweetness and add stevia if necessart. Stir in chia seeds and pour into serving dishes and refrigerate for 30 minutes.
Cashew Cream

Makes 1 cup.
½ cup raw cashews
Soak cashews in hot water for at least 30 minutes or overnight. Drain the cashews and rinse under cold water. Place them in a blender with enough fresh cold water to cover them by 1 inch (about 3/4 cup water.) Blend on high for several minutes until very smooth.
