I am a big fan of soup and not just for dinner…I love it for breakfast too – especially when it’s a bit chilly outside and I definitely do not feel like a smoothie and since I’m off eggs for a little while I had to get creative with my breakfast options.
Enter Bone Broth. I’ve talk about it before but I want to give you a little refresher. Bone broth is a rich and hearty stock that is made with bones, a little meat, chicken feet, a splash of apple cider vinegar and your veggies of choice. It’s cooked low and slow for a very long time and the finished product is one of the most healing foods you can consume.
By cooking the bones for a long period of time you release all that goodness inside including crucial minerals, marrow and gelatin. The chicken feet add a ton of collagen and additional gelatin that aids in gut repair, joint health, fabulous hair, skin and nails and can knock a cold out of the park.

Needless to say – I love this stuff. Which is why I start my day with it.
I also make a variety of dishes with the broth – one of them being this super quick Mexican Chicken Soup. It’s typically a soup I make when I have some leftover chicken in the fridge, broth in the freezer and I almost always have a stash of cooked brown rice or quinoa on hand to whip up quick meals.
And then I eat it for breakfast. It’s amazing and it is quick to heat up and you can drink it from a coffee mug in the car on the way to work.
Mexican breakfast soup
Serves 4

4 cups bone broth
2 cups cooked brown rice
2 cups cooked chicken
1 heaping teaspoon chipotle seasoning (or any mexican spice)
2 avocados, diced
1 small handful cilantro, chopped
2 green onions chopped
salt to taste
lime wedges for garnish
Heat the broth in a pot over medium heat, add rice, chicken and chipotle spice and heat through.
Ladle into bowls and top with cilantro, green onions and avocado.
* You can buy pre-cooked rice in the freezer section
* A rotisserie chicken works great in a pinch
